Tuna Pomodori Ripieni

Tuna Pomodori Ripieni (Stuffed Tomatoes) inspired by a David Rocco recipe.
I watched an old episode of David Rocco’s Dolce Vita where David brings his beautiful wife Nina to the beach and makes tuna stuffed tomatoes, yes on the beach.... only David could pull that off. I loved the episode so much, I decided to make my own version of the recipe. They turned out fantastic! #SimpleHealthyDelicious
INGREDIENTS
- 2 large cans of tuna, packed in oil
- 5 or 6 medium size tomatoes
- 2 stalks celery, finely chopped
- Bunch fresh parsley, finely chopped
- Bunch fresh basil, finely chopped
- 2 or 3 fresh mint leaves, finely chopped
- 1/2 fresh garlic clove, finely chopped (optional) or 1tsp garlic powder
- 1tsp ground paprika
- 1tsp chilly pepper flakes
- 1tsp honey
- Salt and pepper to taste
- Juice of half a lime
- 1tbs of the inside of the tomatoes, juice and seeds (optional)
- Generous amount of olive oil
DIRECTIONS
1. Prep tomatoes:
Cut off 1/3 of the top of the tomatoes, spoon out the inside of the tomatoes, and save some discards for the filling.
2. Filling:
In a bowl, combine the tuna (drained of oil), celery, herbs, and spices. Add desired amount of olive oil, lime juice, honey, and tomato discards to the tuna mix. Mix well, add salt and pepper to taste. Spoon the filling mixture into the tomatoes, pack a generous amount of the filling. Sprinkle with more olive oil and chilly pepper flakes.
